  • 4 cups potatoes, diced
  • 4 cups beef broth
  • 1 cup shredded cheddar cheese
  • 1 cup milk
  • 2 cloves garlic, minced

  • 2 tablespoons butter

Preparation

  • In a large pot, melt the butter over medium heat.
  • Add the chopped onion and garlic; sauté until softened.

Cooking

  • Add the ground beef and cook until browned. Drain any excess fat.
  • Stir in the diced potatoes and beef broth. Bring to a boil, then reduce heat and simmer until the potatoes are tender, about 15-20 minutes.
  • Stir in the milk and shredded cheddar cheese until melted and smooth.
  • Season with salt and pepper to taste. Serve hot.

Notes

For a thicker soup, mash some of the potatoes before adding cheese and milk. Experiment with different cheeses like Monterey Jack or pepper jack, and feel free to add vegetables like carrots or celery for more nutrition.
