Ingredients
  

Main ingredients

  • 1 lb ground beef preferably lean ground beef
  • 2 cups frozen tater tots can substitute with diced and cooked potatoes
  • 1 cup shredded cheddar cheese or use Monterey Jack or Mexican blend cheese
  • 4 large flour tortillas large enough to hold the filling
  • 1 tablespoon olive oil for frying
  • Salt and pepper to taste

  • guacamole for serving

Instructions
 

Cooking the Filling

  • In a skillet over medium heat, cook the ground beef until browned. Season with salt and pepper to taste.
  • Add the tater tots to the skillet and cook until they are crispy and heated through.

Wrapping the Burritos

  • Warm the tortillas in a separate pan or microwave.
  • Place the beef and tater tot mixture in the center of each tortilla. Add the shredded cheese and roll them up.

Frying the Burritos

  • Heat olive oil in a pan over medium heat. Place the burritos seam-side down in the pan and cook until golden and crispy on all sides.

Notes

Serve Cheesy Potato Burritos warm and consider cutting them in half for easier eating. Optional toppings can be added on the side for customization. For storage, refrigerate leftovers in an airtight container for up to 3 days or freeze for up to 2 months.
