  • 4 large Yukon Gold or Russet potatoes, peeled and diced
  • 2 cups shredded cheddar cheese Feel free to mix in Colby Jack or Monterey Jack.
  • 1 can cream of chicken soup Sour cream can also be used.
  • ½ cup sour cream This is the secret ingredient!
  • ¼ cup butter, melted
  • 2 tablespoons green onions, chopped For garnish and flavor.
  • 1 teaspoon garlic powder Optional for extra flavor.
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup cornflakes or crushed crackers, for topping Optional for extra crunch.

Preparation

  • Preheat your oven to 350°F (175°C).
  • In a large bowl, combine the diced potatoes, cream of chicken soup, sour cream, melted butter, half of the shredded cheese, green onions, garlic powder, salt, and pepper.
  • Mix until well combined and pour the mixture into a greased baking dish.
  • Top the casserole with the remaining cheese and a layer of cornflakes or crushed crackers.

Baking

  • Cover the baking dish with foil and bake for 30 minutes.
  • Remove the foil and bake for an additional 15 minutes, or until bubbly and golden brown.

Notes

Let the casserole sit for a few minutes before serving. For best results, use pre-shredded cheese and grease your pan well. This dish can be prepared ahead of time and baked later; just allow it to sit out for 10 minutes before baking.
