Ingredients
  

For the Skillet

  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 small yellow onion, diced
  • 2 cups cooked chicken, shredded Use leftover chicken to save time.
  • 1 cup chicken broth
  • 1 cup frozen mixed vegetables Feel free to add more vegetables, like bell peppers or peas.
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste Salt and pepper Adjust the seasonings to your taste.
  • 1 can refrigerated biscuit dough Can substitute with homemade biscuits.

Preparation

  • In a large skillet, melt the butter with olive oil over medium heat. Add the diced onion and cook until softened.
  • Stir in the shredded chicken, chicken broth, mixed vegetables, garlic powder, onion powder, salt, and pepper. Bring to a simmer.
  • Cut the biscuit dough into quarters and drop them on top of the chicken mixture.
  • Cover and cook for 10-15 minutes, or until the biscuits are golden brown and cooked through.
  • Serve hot.

Notes

Serve the skillet warm straight from the pan. Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the microwave or on the stove until warm. You can customize this dish by using different proteins, such as turkey or rotisserie chicken.
