  • 3 cups cooked chicken (shredded or cubed) Use leftover rotisserie chicken for added flavor.
  • 1 stick butter (melted)
  • 2 cups chicken broth
  • 1 cup self-rising flour
  • 1 cup milk
  • 1 can cream of chicken soup
  • to taste Salt and pepper

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9x13 casserole dish.
  • Spread the cooked chicken evenly in the dish and drizzle the melted butter over it.
  • In a separate bowl, whisk together the flour and milk until smooth. Pour this mixture over the chicken without stirring.
  • In another bowl, mix the chicken broth and cream of chicken soup until well combined. Pour it over the casserole without stirring.
  • Season with salt and pepper to taste.

Baking

  • Bake uncovered for 45-50 minutes, or until the top is golden and the edges are bubbly.

Notes

Serve directly from the oven with a simple side salad or steamed vegetables. Leftovers taste great and can be stored in an airtight container in the refrigerator for up to 3-4 days or frozen for 2-3 months.
