- 2 large boneless skinless chicken breasts
- Salt and pepper to taste
- ¼ cup all-purpose flour
- 1 –2 tablespoons olive oil
- 4 tablespoons butter
- 2 cups chicken broth
- ½ cup beef broth
- ½ chicken bouillon cube
- 1 splash heavy cream optional
- 1 teaspoon Worcestershire sauce optional
Prepare the Chicken: Season the chicken breasts with salt and pepper. Dredge them in flour, shaking off any excess.
Sear the Chicken: In a large skillet over medium-high heat, add olive oil. Sear the chicken breasts until golden brown on both sides, about 4–5 minutes per side. Remove and set aside.
Make the Roux: In the same skillet, melt the butter over medium heat. Add the flour and whisk continuously for about 2 minutes until the mixture turns golden brown.
Create the Gravy: Gradually whisk in the chicken broth and beef broth, ensuring no lumps remain. Add the bouillon cube, heavy cream, and Worcestershire sauce if using. Bring the mixture to a simmer.
Simmer the Chicken: Return the seared chicken to the skillet, nestling it into the gravy. Reduce the heat to low, cover, and simmer for 20–25 minutes, or until the chicken is cooked through and tender.
Serve: Serve the chicken and gravy over mashed potatoes, rice, or biscuits.
