Ingredients

Main Ingredients

  • 3 cups cooked pasta (penne or rotini) Cooked to al dente
  • 2 cups shredded rotisserie chicken Can substitute with any cooked chicken
  • 8 slices bacon Cooked until crispy, and diced
  • 1 cup ranch dressing For mixing into the pasta
  • 1 cup cheddar cheese For topping, extra recommended for a bubbly crust

Optional Add-ins

  • 2 cups steamed broccoli For a lighter version
  • 2 cups fresh spinach Another great lightening option
  • 1 cup zoodles or spaghetti squash For a low-carb alternative
  • 1 tablespoon buffalo hot sauce For a spicy kick

Instructions

Preparation

  • Cook the pasta according to package directions until al dente. Drain and set aside.
  • In a skillet, cook bacon until crispy. Drain and chop into bits.

Mixing

  • In a large bowl, combine cooked pasta, shredded chicken, cooked bacon, and ranch dressing. Toss to coat.
  • If using any optional add-ins, fold them into the mixture.

Baking

  • Transfer the mixture to a greased baking dish.
  • Top with cheddar cheese.
  • Bake in a preheated oven at 350°F (175°C) for about 25-30 minutes or until heated through and cheese is bubbly.

Notes

To prevent pasta from sticking, toss with a dab of ranch dressing before the final mix. If the casserole looks dry, tent with foil in the oven.
