Main Ingredients

  • 2 cups cooked chicken (chopped or shredded) Use fresh chicken breasts or rotisserie chicken.
  • 1 cup white long-grain rice Preferably long-grain white rice.
  • 2 cups fresh or frozen broccoli florets Can use frozen for convenience.
  • 1 can cream of chicken soup
  • 1 cup shredded cheddar cheese Melted cheese on top for a crunchy topping.

Optional Seasonings

  • 1 tsp dried thyme
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning

Preparation

  • Start by choosing whether to use fresh chicken breasts or rotisserie chicken. If using fresh, cut the breasts into small pieces. If using rotisserie chicken, shred it into smaller pieces.

Cooking the Rice and Broccoli

  • Boil water in a saucepan, add rice following package instructions (usually 15-20 minutes), and add broccoli florets for the last 5 minutes. Drain and set aside.

Combining Ingredients

  • In a large bowl, combine cooked rice, broccoli, chicken, and optional seasonings. Mix well to coat all ingredients with flavor.
  • Pour the mixture into a greased casserole dish, spreading it evenly.

Baking

  • Cover with foil and bake in the preheated oven at 350°F (175°C) for 20-25 minutes. Remove foil in the last 10-15 minutes to allow cheese to brown.

Notes

Refrigerate leftovers in airtight containers for up to 3 days. To freeze, cover tightly and store for up to 3 months.
