Casserole Ingredients

  • 4 cups shredded chicken Use leftover roasted chicken for more flavor.
  • 4 cups cornbread or cubed dried bread
  • 1 cup chopped celery
  • 1 cup chopped onion
  • 1 can cream of onion soup
  • 1.5 cups chicken broth A splash may be used while mixing.
  • 2 tbsp butter For sautéing the vegetables.
  • 1 tsp poultry seasoning
  • 0.5 tsp dried sage
  • Salt and pepper to taste

Gravy Ingredients

  • 0.25 cup unsalted butter
  • 2 cups chicken broth
  • 0.5 cup heavy cream
  • 0.25 cup flour
  • Salt and pepper to taste

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C).
  • Melt the butter in a skillet over medium-high heat.
  • Sauté the onion and celery until they are tender.
  • In a large bowl, mix together the cornbread, shredded chicken, sautéed vegetables, sage, poultry seasoning, cream of onion soup, and a splash of chicken broth. Combine everything well.
  • Grease a 9x13-inch baking dish and spread the mixture evenly inside.
  • Bake for 45 minutes until the top is golden brown.

Gravy Preparation

  • For the gravy, melt butter in a skillet and whisk in flour until it turns golden brown.
  • Gradually add chicken broth, salt, and pepper, stirring until it thickens.
  • Stir in heavy cream and let it simmer for 5-10 minutes until it becomes silky.
  • Drizzle the gravy over the casserole before serving. Optional: Garnish with parsley or green onions.

Notes

If you have leftovers, store in an airtight container in the refrigerator for 3-4 days or freeze for up to 3 months. Reheat in the oven until warm.
