Ingredients
  

Main Ingredients

  • 1 lb boneless skinless chicken breasts or thighs
  • 2 medium bell peppers mix of red, green, and yellow
  • 1 medium onion yellow or white
  • 1 tbsp olive oil for cooking
  • 8 count tortillas flour or corn

Spice Mix

  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 pinch cayenne optional, for spiciness
  • 1 large lime juiced, absolutely vital for flavor
  • to taste salt
  • to taste pepper

Optional Toppings

  • 1 cup fresh cilantro for garnish
  • 1 count jalapeƱo sliced, optional for spice

Instructions
 

Preparation

  • Slice the chicken into strips and toss with half of the spice mix and a drizzle of oil.
  • Heat a skillet over high heat until it's screaming hot.

Cooking

  • Add the chicken to the hot skillet and cook for about 5-7 minutes until golden and cooked through.
  • Remove the chicken from the pan and set aside.
  • Add the sliced bell peppers and onion to the pan, sprinkle in the remaining spice mix, and cook until just tender but still bright.
  • Squeeze fresh lime juice over the veggies, return the chicken to the skillet, and stir to combine.
  • Stuff the mixture into warm tortillas and serve.

Notes

You can swap chicken for thin-sliced steak, shrimp, or portobello mushrooms for a vegetarian version. For a different flavor, add hot sauce or swap lemon for lime. Best served with refried beans, salsa, or guacamole.
