  • 1 lb boneless, skinless chicken breasts or thighs Cut into bite-sized pieces
  • 1 lb fresh green beans Trimmed and cut into 1-2 inch pieces
  • 3 tbsp soy sauce Can substitute with tamari or coconut aminos for gluten-free
  • 1 tbsp rice wine vinegar
  • 2 tbsp coconut sugar Adjust sweetness to taste
  • 1 tbsp sesame oil
  • 2 cloves garlic Minced
  • 1 inch ginger Grated or minced
  • 2 tbsp oil For cooking

Instructions
 

Preparation

  • Marinate the chicken in a mixture of soy sauce, garlic, and ginger for 15-30 minutes.
  • Blanch the green beans in boiling water for 2-3 minutes, then cool them in an ice bath.

Cooking

  • Heat a wok or large skillet over high heat and add oil.
  • Cook the marinated chicken until golden and cooked through, then set aside.
  • In the same pan, stir-fry the blanched green beans with additional garlic and ginger for 2-3 minutes.
  • Return the chicken to the pan and combine with the green beans.
  • Add remaining sauce ingredients to the pan and stir until everything is coated and heated through.

Serving

  • Serve hot, garnished with sesame seeds or green onions, and enjoy with rice or noodles.

Notes

Feel free to adjust the ingredients to meet dietary preferences. This recipe can be adapted for a spicier version by adding chili peppers or for a sweeter one by increasing the coconut sugar.
