  • 1 tablespoon canola oil
  • 8 ounces lo mein noodles, cooked
  • 2 cups cooked chicken, shredded Can use leftover chicken.
  • 1 cup mixed vegetables (e.g., bell peppers, carrots, snow peas) Feel free to add more vegetables.
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce Adjust to taste.
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • to taste green onions, sliced for garnish

Instructions
 

Preparation

  • Cook the lo mein noodles according to package instructions and set aside.
  • In a large skillet or wok, heat the canola oil over medium-high heat.
  • Add minced garlic and sauté for 30 seconds until fragrant.

Cooking

  • Add mixed vegetables and stir-fry until they are tender.
  • Add the cooked chicken and mix well.
  • Pour in the soy sauce, oyster sauce, and sesame oil. Stir to combine all the ingredients.
  • Add the cooked lo mein noodles and toss everything together until the noodles are evenly coated with the sauce.
  • Cook for an additional 1-2 minutes, then remove from heat.
  • Serve hot, garnished with sliced green onions.

Notes

If you have leftovers, let the Chicken Lo Mein cool down and place it in an airtight container. Store it in the refrigerator for up to 3 days. Reheat in a skillet over low heat or in the microwave until warmed through. For vegetarian, replace chicken with tofu or add more vegetables. For gluten-free, use gluten-free noodles and check labels on sauces.
