  • 4 pieces Fresh chicken breasts Pound for even cooking.
  • 2 cups Cherry tomatoes Fresh for optimal flavor.
  • 3 cloves Garlic Minced.
  • 1 medium Onion Chopped.
  • ½ cup White wine Used for deglazing.
  • 1 cup Chicken broth Low sodium recommended.
  • 2 tablespoons Olive oil For cooking.
  • ¼ cup Fresh basil Chopped, for garnish.
  • ¼ cup Parmesan cheese Grated, for serving.
  • Salt to taste Salt For seasoning.
  • Pepper to taste Pepper For seasoning.
  • 1 teaspoon Garlic powder For seasoning chicken.

Instructions
 

Preparation

  • Pound the chicken breasts to even thickness and season both sides with salt, garlic powder, and pepper.
  • Heat 1 tablespoon of olive oil in a skillet over medium heat.

Cooking the Chicken

  • Cook the chicken in the skillet for about 6 minutes on each side or until golden brown and cooked through.
  • Remove the chicken from the skillet and let it rest.

Making the Sauce

  • In the same skillet, add another tablespoon of olive oil and sauté the chopped onions and minced garlic until fragrant.
  • Deglaze the pan with white wine, scraping up any browned bits.
  • Add cherry tomatoes and chicken broth to the skillet, cooking until the tomatoes are tender.
  • Finish with a pinch of sugar and fresh basil.

Combining

  • Return the cooked chicken to the skillet with the sauce and let it simmer to blend the flavors.
  • Serve with a sprinkle of fresh basil and grated Parmesan cheese.

Notes

For a creamier sauce, add grated cheese. Customize by adding red pepper flakes for spice.
