Chicken Quesadillas

Ingredients
  

For the Quesadilla Filling

  • 1 tablespoon olive oil For cooking the chicken
  • 1 pound boneless, skinless chicken breasts (cut into ¾-inch pieces, about 2 breasts)
  • ½ onion (diced)
  • 1 bell pepper (any color, diced)
  • 1 clove garlic (minced)
  • 1 tablespoon taco seasoning Store-bought or homemade; use ½ packet
  • ¼ cup taco sauce Store-bought or homemade

For Cooking the Quesadillas

  • 4 tablespoons unsalted butter (divided) For cooking the quesadillas
  • 4 large flour tortillas
  • 2 cups shredded Mexican cheese blend For filling the quesadillas

  • Jalapeño peppers For topping

Instructions
 

Preparation

  • Heat the olive oil in a large skillet over medium heat.
  • Add the chicken to the skillet and cook until it is no longer pink on the surface but not fully cooked through.
  • Add the diced onion and bell pepper to the skillet. Continue to cook until the vegetables are softened and the chicken is completely cooked.
  • Stir in the minced garlic, taco seasoning, and taco sauce. Cook for an additional 1-2 minutes until everything is fragrant. Remove from heat and set aside.

Cooking Quesadillas

  • Wipe out the skillet or use a second skillet and set it over medium heat. Add 1 tablespoon of butter and let it melt.
  • While the butter is melting, sprinkle a handful of cheese on one half of a tortilla. Top it with a quarter of the chicken mixture and another handful of cheese. Fold the tortilla in half and place it in the pan.
  • Cook until the underside is golden brown, about 2-3 minutes. Flip it over and cook for another 2-3 minutes until the cheese is melted and the tortilla is golden on the other side.
  • Repeat this process with the remaining quesadillas.
  • Serve with your favorite toppings.

Notes

To store leftover chicken quesadillas, let them cool down first. Then, wrap them tightly in plastic wrap or aluminum foil and place them in an airtight container. You can keep them in the refrigerator for up to 3 days. For longer storage, consider freezing them separated with parchment paper in a freezer-safe bag.
