Chicken, Spinach, and Mushroom Low-Carb Oven Dish

Ingredients
  

Main Ingredients

  • 1.5 pounds boneless, skinless chicken breast or thighs, cut into 1-inch pieces Chicken can be breast or thighs.
  • 1 small bag fresh baby spinach
  • 1 cup sliced mushrooms (button, cremini, or shiitake) Any type of mushroom can be used.
  • 2 cloves garlic, minced
  • 0.5 cup grated cheddar cheese (optional) Use for a cheesy flavor.
  • 0.25 cup chopped fresh parsley For garnish.
  • Dash of pepper
  • Dash of herb and garlic seasoning
  • 2 tablespoons olive oil For cooking.
  • Salt, to taste

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a large bowl, toss the chicken pieces with olive oil, pepper, and herb and garlic seasoning until coated.
  • In a large skillet, heat some olive oil over medium heat. Add the sliced mushrooms and cook until they release their moisture and start to brown, about 5 minutes. Add the minced garlic and cook for an additional minute.

Layering and Baking

  • In a large baking dish, arrange half of the chicken pieces in the bottom of the dish. Top with half of the sautéed mushrooms, half of the fresh spinach, and half of the grated cheddar cheese (if using). Repeat the layers.
  • Cover the dish with aluminum foil and bake for 20-25 minutes. Remove the foil and continue baking for an additional 5-10 minutes, or until the chicken is cooked through and the top is lightly browned.

Serving

  • Serve hot, garnished with chopped fresh parsley and a sprinkle of grated cheese (if desired).

Notes

For best results, use fresh ingredients. Adjust seasonings to taste, and store leftovers in an airtight container for up to 3 days in the refrigerator or freeze for up to 2-3 months.
