  • 3 tbsp butter Unsalted butter preferred
  • 2 tbsp all-purpose flour For thickening the sauce
  • 2 cups chicken broth Low sodium recommended
  • 1 cup heavy cream For a rich sauce
  • 1 tsp garlic powder Or use fresh minced garlic
  • 1 cup freshly grated Parmesan cheese For authentic flavor
  • 2 cups cooked chicken Shredded rotisserie chicken works best

Instructions
 

Cooking the Tortellini

  • Boil water in a large pot with a pinch of salt. Add the tortellini and cook until just al dente, about 3 to 5 minutes.

Making the Sauce

  • While the tortellini cooks, melt the butter in a skillet over medium heat.
  • Stir in the flour to create a roux; cook until lightly golden.
  • Gradually add chicken broth, whisking continuously to avoid lumps.
  • Mix in heavy cream and sprinkle garlic powder for flavor.
  • Add Parmesan cheese, stirring until melted and creamy.

Combining and Serving

  • Drain the cooked tortellini and toss them with the sauce and cooked chicken.
  • Adjust seasoning to taste; optionally garnish with parsley or more Parmesan.

Notes

For best results, keep the sauce at a gentle simmer and avoid overcooking the tortellini. This dish can easily be customized with added vegetables like broccoli or spinach, or by using shrimp for a protein variation.
