  • 1 can (15 oz) Canned Chickpeas Rinsed and drained
  • 1 stalk Celery, finely chopped
  • ¼ cup Red Onion, finely chopped
  • ¼ cup Vegan Mayonnaise Can substitute with avocado or cashew cream
  • 1 tablespoon Mustard
  • to taste Salt
  • to taste Pepper
  • 1 tablespoon Fresh Herbs (optional), chopped e.g. parsley or dill

Preparation

  • Begin by draining and rinsing the canned chickpeas.
  • In a bowl, mash the chickpeas with a fork or potato masher until they reach a chunky consistency.
  • Add chopped celery, red onion, vegan mayonnaise, and mustard to the bowl.
  • Season with salt and pepper, adding fresh herbs if desired.
  • Mix all ingredients until combined well.
  • Serve on your favorite bread, or spoon into lettuce cups for a low-carb option.

Notes

Store in an airtight container in the fridge for 4-5 days. To avoid soggy bread, layer the salad at the bottom and veggies on top. For a delicious lunch, prepare sandwiches just before eating.
