- 1 15 oz can chickpeas, drained and rinsed
- 2 –3 tbsp vegan mayo or plain Greek yogurt for a vegetarian version
- 1 tsp Dijon mustard
- ¼ cup finely diced celery
- ¼ cup finely diced red onion
- 1 tbsp chopped fresh parsley optional
- Salt and pepper to taste
- Bread slices or sandwich rolls
- Lettuce or spinach leaves optional
In a bowl, mash the chickpeas with a fork or potato masher until mostly broken down, leaving some chunks for texture.
Stir in vegan mayo (or yogurt), Dijon mustard, celery, red onion, parsley, salt, and pepper.
Mix well until evenly combined.
