Ingredients
  

  • 1 15 oz can chickpeas, drained and rinsed
  • 2 –3 tbsp vegan mayo or plain Greek yogurt for a vegetarian version
  • 1 tsp Dijon mustard
  • ¼ cup finely diced celery
  • ¼ cup finely diced red onion
  • 1 tbsp chopped fresh parsley optional
  • Salt and pepper to taste
  • Bread slices or sandwich rolls
  • Lettuce or spinach leaves optional

Instructions
 

  • In a bowl, mash the chickpeas with a fork or potato masher until mostly broken down, leaving some chunks for texture.
  • Stir in vegan mayo (or yogurt), Dijon mustard, celery, red onion, parsley, salt, and pepper.
  • Mix well until evenly combined.
  • Serve between slices of bread with lettuce or spinach, or enjoy in a wrap or lettuce cup.
