  • 1 lb ground turkey 93% lean
  • 16 oz green beans trimmed and cut into 2-inch pieces
  • 8 oz mushrooms sliced
  • 3 garlic cloves minced
  • 1 tbsp olive oil
  • ½ tsp salt
  • ½ tsp black pepper
  • ¼ cup hoisin sauce
  • 3 tbsp low-sodium soy sauce
  • 3 tbsp rice vinegar
  • 3 tbsp brown sugar
  • 1 tsp cornstarch
  • 3 cups cooked brown rice for serving

Instructions
 

Cooking

  • Whisk the hoisin, soy sauce, rice vinegar, brown sugar, and cornstarch in a small bowl.
  • Heat the olive oil in a large skillet over medium-high heat. Cook the green beans and mushrooms 6 to 8 minutes until the mushrooms are browned and the beans are tender-crisp. Move to a plate.
  • Add the turkey, garlic, salt, and pepper to the pan and cook 6 to 8 minutes, breaking it up, until no pink remains (165°F/74°C).
  • Return the vegetables to the pan, pour in the sauce, and cook 2 to 3 minutes until thickened and glossy.
  • Serve over brown rice.

Notes
