Preparation

  • Preheat your oven to 350°F (175°C).
  • Melt your chocolate using a microwave or double boiler, then let it cool slightly.
  • In a mixing bowl, combine sugar, eggs, and vanilla extract until smooth.
  • Stir in the melted chocolate until fully incorporated.
  • In another bowl, whisk the flour, cocoa powder, baking powder, espresso powder, and salt.
  • Gradually fold the dry ingredients into the wet mixture until just combined.
  • Chill the dough in the refrigerator for at least 20 minutes.

Baking

  • Drop spoonfuls of the dough onto a lined baking sheet, leaving enough space for spreading.
  • Bake for 10-12 minutes, ensuring the edges are set but the centers remain soft.
