Main Ingredients
- 3 medium ripe bananas mashed until mostly smooth
- 1 cup granulated sugar
- 2 large eggs at room temperature
- ⅓ cup vegetable oil or melted butter
- 1 tsp vanilla extract
- 180 g all purpose flour about one and a half cups, spooned and leveled
- 1 tsp baking powder
- ¼ tsp salt
- 1 cup semi sweet chocolate chips
Cooking
Prep. Preheat to 350 degrees F with the rack in the middle. Grease a 9 by 5 inch loaf pan and line it with parchment.
Mix. Whisk the mashed bananas with sugar, eggs, oil, and vanilla. Fold in flour, baking powder, and salt until just combined.
Fill. Fold in most of the chips, scrape the batter into the pan, and sprinkle the remaining chips on top.
Bake. Bake for 60 minutes until a toothpick comes out with a few moist crumbs. Tent with foil if the top browns early.
Cool. Cool in the pan for 10 minutes, then transfer to a wire rack before slicing.
Substitutions: Use melted butter in place of the oil for a richer loaf.
Tips: Toss the chips in a spoonful of flour so they stay suspended in the batter.
Storage: Keep wrapped at room temperature for up to 3 days or freeze for up to 3 months.
