Ingredients
  

For the cookie dough layer

  • 1 cup flour
  • ½ cup unsalted butter, softened Ensure butter is softened for easy mixing.
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup chocolate chips Feel free to add more chocolate chips for extra richness.

For the cake assembly

  • 2 cups vanilla ice cream Alternatively, try chocolate or cookie dough ice cream.
  • 1 whole chocolate cake, baked and cooled

Preparation

  • Preheat the oven and grease your cake pan.
  • In a bowl, cream together the butter, brown sugar, and granulated sugar.
  • Beat in the egg and vanilla until combined, then mix in the flour and fold in the chocolate chips.
  • Spread the cookie dough mixture into the bottom of the greased cake pan and bake for about 10-12 minutes. Let it cool.

Assembly

  • Once the chocolate cake is cooled, layer it with vanilla ice cream on top of the cookie dough layer.
  • Freeze until set, then serve slices of this cake.

Notes

Serve chilled, straight from the freezer. Top with chocolate sauce or whipped cream for an extra treat! To store, wrap tightly in plastic wrap and place in the freezer. It can last for up to two weeks.
