Ingredients
  

Main Ingredients

  • 100 g unsalted butter, softened Make sure your butter is softened to room temperature.
  • 80 g powdered sugar
  • 1 unit egg, at room temperature
  • 1 tsp vanilla extract
  • 180 g all-purpose flour
  • 25 g unsweetened cocoa powder
  • 1 pinch salt
  • ½ tsp baking powder (optional) Optional for extra lift.

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C) and line 1–2 perforated baking sheets with parchment paper.
  • In a medium bowl, sift together the dry ingredients: flour, cocoa powder, salt, and baking powder (if using).
  • In a large bowl, cream the softened butter with the powdered sugar using an electric mixer until smooth and creamy.
  • Add the egg and vanilla extract and mix until fully incorporated.
  • Add the dry ingredient mixture and mix on low speed until just combined, forming a sticky dough.
  • Use a pastry scraper to gather the dough into a ball, wrap in plastic wrap, and shape into a flat disk.
  • Refrigerate for at least 20 minutes.
  • Roll the chilled dough between two sheets of parchment paper to about 1/8 inch thick, then freeze for 10–15 minutes.
  • Use cookie cutters to cut out shapes and place them on the prepared baking sheets.

Baking

  • Bake in the preheated oven for 8–10 minutes, or until the edges are firm and the centers are slightly soft.
  • Let cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Decorate cookies with icing or sprinkles for special occasions. Store in an airtight container at room temperature for up to one week.
