  • 4 whole egg yolks for richness

Preparation

  • Start with your baked pie crust and let it cool if it's still hot.
  • In a saucepan, mix sugar, cocoa powder, cornstarch, and salt.
  • Pour in the milk slowly and whisk until smooth.

Cooking

  • Heat the mixture over medium heat, whisking continuously until it thickens, about 8 minutes.
  • Beat the egg yolks in a separate bowl.
  • Spoon a bit of the hot chocolate mixture into the egg yolks, whisking fast to temper them.
  • Pour the egg mixture back into the pot and cook for an additional 2 minutes until thickened.

Final Steps

  • Remove the pot from heat and stir in the butter and vanilla extract.
  • Pour the filling into the cooled pie crust and smooth the top.
  • Refrigerate for a few hours to set before serving.

Notes

For added fun, top the pie with whipped cream, cocoa powder, fresh berries, or a drizzle of chocolate frosting. If the filling is runny, cook it longer, and if it's lumpy, whisk more or use an immersion blender.
