  • 2 large eggs
  • 1 ¼ cup whole milk 300 g
  • 1 tsp vanilla extract
  • 4 tbsp unsalted butter melted, plus more for the skillet
  • ½ cup brown sugar 110 g
  • 2 cup all purpose flour 240 g
  • ½ tsp salt
  • 1 tsp ground cinnamon
  • 1 tbsp baking powder

  • Whisk the eggs, milk, vanilla, melted butter, and brown sugar until combined.
  • Sift the flour, salt, cinnamon, and baking powder into the liquid and whisk until smooth with a few small lumps.
  • Heat a large skillet over medium low heat, about 325 degrees F, and add a pat of butter.
  • Pour 1/4 cup of batter into the pan for each pancake.
  • Cook for about 1 minute and 30 seconds, until the underside is golden.
  • Flip and cook for about 1 more minute. Serve warm with maple syrup and butter.

Notes

Do not overmix the batter and make sure the skillet is preheated. Use fresh baking powder. A serving is about 3 pancakes. Nutrition is an estimate.
