Ingredients
  

For the candy mixture

  • 1 cup water
  • 3 ¾ cups sugar Granulated sugar
  • 1 ¼ cups light corn syrup
  • 1 tsp red food coloring Adjust for desired color
  • 1-2 tsp cinnamon oil Adjust to taste

For finishing

  • 1 ½ cups powdered sugar For dusting
  • Butter For greasing the baking sheet

Instructions
 

Preparation

  • In a saucepan, combine the water, sugar, and corn syrup.
  • Heat the mixture over medium heat, stirring until the sugar has dissolved.
  • Add red food coloring and cinnamon oil, adjusting the amount to your taste.
  • Bring the mixture to a boil without stirring.
  • Use a candy thermometer to boil until it reaches the hard crack stage (300°F or 150°C).
  • Remove the pan from heat and let it cool for a few minutes.
  • Pour the hot mixture onto a greased baking sheet to cool completely.
  • Once cooled, break the candy into pieces and dust them with powdered sugar to prevent sticking.

Notes

Store your Cinnamon Rock Candy in an airtight container at room temperature to maintain its crunchy texture. Adjust the cinnamon oil according to your preferred spice strength. Grease your baking sheet well to make removing the candy easier.
