Ingredients
  

For the Cinnamon Sugar Mixture

  • ¾ cup sugar Granulated sugar
  • 1 tablespoon ground cinnamon Adjust to taste

For the Pretzel Dough

  • 2 pounds pizza dough Store-bought or homemade, at room temperature
  • cup baking soda For boiling the dough
  • 1 large egg Beaten, for brushing
  • ¼ cup unsalted butter Melted

Instructions
 

Preparation

  • Preheat your oven to 450 degrees F (232 degrees C). Line 2 baking sheets with parchment paper.
  • In a small bowl, combine sugar and cinnamon; set this mixture aside.
  • On a lightly floured surface, cut the dough into 4 equal strips. Roll each strip into a long rope, about 12-14 inches in length, and then cut each rope into 1-inch pieces.

Cooking

  • In a medium saucepan, heat 6 cups of water and add the baking soda. Bring the mixture to a boil.
  • In batches, drop the dough pieces into the boiling water. Let them cook until they puff slightly and get dimples (about 30 seconds). Then, remove them with a slotted spoon and drain well.
  • Place the dough pieces onto the prepared baking sheets, leaving about 1/2-inch space between them. Brush each piece with the beaten egg.
  • Bake in the preheated oven until golden brown, about 9-12 minutes.
  • Once baked, combine the warm pretzel bites with the melted butter and cinnamon-sugar mixture until each piece is evenly coated.

Notes

Best served warm. Can be stored in an airtight container at room temperature for 2-3 days or frozen for longer storage. Reheat in the oven when ready to serve.
