  • 1 pound ground beef (or ground turkey) Use ground turkey for a lighter meal.
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 can (15 ounces) kidney beans, drained and rinsed Canned beans are convenient.
  • 1 can (15 ounces) black beans, drained and rinsed Canned beans are convenient.
  • 2 tablespoons chili powder Adjust spice level to taste.
  • 1 teaspoon cumin
  • to taste Salt and pepper
  • 1 cup beef broth (optional for thicker chili) For a thinner consistency.

  • In a large pot over medium heat, cook the ground beef (or turkey) until browned. Drain any excess fat.
  • Add chopped onion and minced garlic, cooking until the onion is translucent.
  • Stir in the diced tomatoes, beans, chili powder, cumin, salt, and pepper.
  • If using, add beef broth for a thinner consistency.
  • Simmer on the stovetop for at least 30 minutes, stirring occasionally, or transfer to a slow cooker and cook on low for 6-8 hours.

Notes

Longer simmering develops deeper flavors. For a vegetarian version, replace the meat with additional beans or lentils. Can add vegetables like bell peppers or corn for variations.
