Ingredients
  

Main Ingredients

  • 1 pound ground beef (80/20 blend) Fat means juicy
  • 1 medium onion, diced Adds oomph
  • 2 cloves garlic, smashed Use more if desired
  • 1 cup bread crumbs Plain or use torn bread/crackers
  • 2 large eggs Bind the mixture
  • 1 splash milk Just a bit for moisture
  • ½ cup ketchup Plus extra for the glaze
  • 1 tablespoon Worcestershire sauce For amazing flavor
  • to taste salt & pepper Heavy hand with the pepper recommended
  • 1 teaspoon dried herbs (thyme or parsley) Use whatever's in the spice rack

Instructions
 

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine ground beef, diced onion, smashed garlic, breadcrumbs, eggs, splash of milk, ketchup, Worcestershire sauce, dried herbs, and salt and pepper.
  • Using your hands, mix all the ingredients together until well combined.
  • Form the mixture into a loaf shape and place it on a lightly greased baking pan or in a loaf pan.

Cooking

  • Spread additional ketchup over the top of the meatloaf.
  • Bake in the preheated oven for 55-60 minutes or until the internal temperature reaches 160°F (70°C).
  • Remove from oven and let it rest for 10 minutes before slicing.

Notes

Don’t overmix the meat; it will make a tough loaf. Glaze can be adjusted with BBQ sauce or other sweeteners. Leftovers freeze well.
