Main Ingredients
- 2 lime wedges freshly cut
- 3-4 fresh mint leaves
- 1 tbsp white or brown granulated sugar
- 1 ½ oz white rum
- 6 oz club soda chilled
- 1 cup crushed ice for serving
- 1 lime wedge for garnish, optional
- 1 sprig mint for garnish, optional
Cooking
Muddle. In a sturdy glass or metal cup, add the lime wedges, torn mint, and sugar. Press and twist with a wooden spoon until the sugar looks wet and the mint is fragrant.
Add rum. Pour the rum over the top and muddle a little more.
Add soda. Pour in 4 oz of the chilled club soda and swirl gently.
Pour. Pour into a glass filled with crushed ice.
Top and garnish. Finish with the remaining club soda and garnish with a lime wedge and mint sprig.
Substitutions: Use brown sugar for a hint of molasses, or about 1/2 oz simple syrup in place of the sugar.
Tips: Press the mint gently so it does not turn bitter, and chill the soda first.
Storage: Ideal fresh. Store leftover ingredients separately.
