- ½ cup coconut flour
- ¼ cup psyllium husk powder
- 1 teaspoon baking powder
- ½ teaspoon salt
- 4 large eggs
- 1 tablespoon apple cider vinegar
- ½ cup boiling water
- Optional toppings: sesame seeds everything bagel seasoning, poppy seeds
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large mixing bowl, combine coconut flour, psyllium husk, baking powder, and salt.
Add eggs and apple cider vinegar, mixing until a thick dough forms.
Pour in the boiling water and stir immediately. Let sit for 1–2 minutes to thicken.
Divide the dough into 6 equal portions. Shape each into a ball, then form into bagel shapes by poking a hole in the center.
Place the bagels on the prepared baking sheet. Add toppings if desired.
Bake for 25–30 minutes or until golden brown and firm to the touch.
Cool completely before slicing and toasting.
