Ingredients
  

  • ½ cup coconut flour
  • ¼ cup psyllium husk powder
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • 4 large eggs
  • 1 tablespoon apple cider vinegar
  • ½ cup boiling water
  • Optional toppings: sesame seeds everything bagel seasoning, poppy seeds

Instructions
 

  • Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a large mixing bowl, combine coconut flour, psyllium husk, baking powder, and salt.
  • Add eggs and apple cider vinegar, mixing until a thick dough forms.
  • Pour in the boiling water and stir immediately. Let sit for 1–2 minutes to thicken.
  • Divide the dough into 6 equal portions. Shape each into a ball, then form into bagel shapes by poking a hole in the center.
  • Place the bagels on the prepared baking sheet. Add toppings if desired.
  • Bake for 25–30 minutes or until golden brown and firm to the touch.
  • Cool completely before slicing and toasting.
