Ingredients
  

  • ¼ cup coconut flour
  • ¼ cup coconut oil melted
  • ¼ cup maple syrup or keto sweetener
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • Optional: pinch of salt or chocolate chips

Instructions
 

  • Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  • In a medium bowl, mix eggs, melted coconut oil, maple syrup, and vanilla extract until smooth.
  • Stir in coconut flour and optional pinch of salt. Let sit for 2–3 minutes to thicken.
  • Scoop dough into small balls and flatten slightly on the baking sheet.
  • Bake for 10–12 minutes, until edges are golden brown.
  • Cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
