Ingredients
  

For the Drink

  • 8 leaves fresh mint leaves Use fresh mint for best flavor.
  • 1 medium lime, juiced Freshly squeezed lime juice is recommended.
  • 1 to 2 teaspoons granulated sugar Adjust based on your sweetness preference.
  • 1 oz cream of coconut Alternatively, use coconut water for a lighter drink.
  • 3 oz light rum For a non-alcoholic version, omit this ingredient.
  • to top Club soda or sparkling water Use enough to fill the glass.

For Garnish

  • as desired lime wedges For garnish.
  • as desired fresh mint leaves For garnish.
  • as desired sweetened flaked coconut Optional, for added flavor and decoration.

Instructions
 

Preparation

  • Place mint leaves, granulated sugar, lime juice, and cream of coconut in a tall sturdy highball glass.
  • With a cocktail muddler or the back of a sturdy spoon, press and gently twist the mint leaves against the side of the glass until bruised and fragrant.
  • Add light rum, fill the glass 3/4 full with ice, and top with club soda or sparkling water.
  • Stir thoroughly and garnish with lime wedges, mint, and coconut if desired.

Notes

Coconut Mojitos are best enjoyed fresh. Store mint leaves and lime juice in the fridge for a day if needed. Chill ingredients and glasses for a more refreshing drink.
