Ingredients
  

For the cookie base

  • ½ cup unsalted butter Melted
  • ½ teaspoon salt
  • cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • ½ cup all-purpose flour

For the cheesecake layer

  • 8 oz cream cheese, softened
  • cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups whipped cream
  • Blue food coloring Add to achieve desired color
  • Crushed cookies for topping To decorate before serving

Instructions
 

Preparation and Baking

  • Preheat the oven to 350°F (175°C). Grease a baking dish.
  • In a bowl, melt the butter and mix in salt and brown sugar.
  • Add the egg and vanilla extract, and mix well.
  • Gradually add the flour and combine until smooth.
  • Spread the cookie mixture into the baking dish and bake for about 20 minutes or until golden. Let it cool.

Cheesecake Layer

  • In another bowl, beat together the softened cream cheese, granulated sugar, and vanilla extract until smooth.
  • Fold in the whipped cream and some blue food coloring until the desired color is achieved.
  • Pour the cheesecake layer on top of the cooled cookie blondie base.
  • Refrigerate for at least 4 hours or until set.
  • Top with crushed cookies before serving.

Notes

Keep any leftovers in an airtight container in the refrigerator for about 3 to 5 days.
