Ingredients
  

For the Chicken Salad

  • 1 pound chicken tenders (or chicken breast)
  • 8 cups chicken broth
  • ½ cup mayonnaise
  • 1 stalk celery, diced
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon celery salt
  • teaspoon ground black pepper
  • teaspoon salt

Preparation

  • Add chicken broth to a large pot and bring it to a boil.
  • Place the chicken into the boiling broth. Turn the heat to medium and cook for 10 minutes or until the internal temperature reaches 165°F.
  • Place the cooked chicken tenderloins in a food processor and pulse to shred the chicken. Alternatively, use a fork to shred the chicken.
  • In a bowl, combine mayonnaise, garlic powder, onion powder, celery salt, salt, and pepper. Stir to mix well.
  • Add the shredded chicken and diced celery to the bowl and mix everything together.
  • Cover and refrigerate until ready to serve.

Notes

Serve on lettuce, in a sandwich, or with crackers. For extra flavor, add mustard or chopped pickles. Adjust seasonings to taste. Store leftovers in an airtight container for up to 3 days.
