Ingredients
  

Coleslaw Base

  • 4 cups finely chopped cabbage
  • ½ medium carrot, very finely chopped
  • 2 tablespoons minced onion

Dressing

  • 2 tablespoons buttermilk
  • 4 teaspoons white vinegar
  • 2 tablespoons milk
  • ¼ cup mayonnaise
  • 2 teaspoons freshly squeezed lemon juice
  • 4 teaspoons granulated sugar
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper

Preparation

  • In a large bowl, combine the chopped cabbage, carrot, and onion.
  • In a separate bowl, whisk together buttermilk, milk, mayonnaise, white vinegar, lemon juice, sugar, salt, and black pepper.
  • Pour the dressing over the cabbage mixture and toss well to combine.
  • Chill in the refrigerator for at least 1 hour before serving.

Notes

For extra crunch, add some finely chopped green bell peppers or celery. If you prefer a sweeter coleslaw, add a bit more sugar to the dressing. Use fresh, crisp vegetables for the best flavor and texture. Let the coleslaw sit in the fridge for a few hours for the flavors to meld together. It can be stored in an airtight container in the refrigerator for up to 3 days.
