For the dip

  • 2 cans canned corn You can use fresh or frozen corn as substitutes.
  • 1 cup sour cream Greek yogurt can be used for a lighter option.
  • 1 cup cream cheese Softened for easy mixing.
  • 1 cup shredded cheese Cheddar, pepper jack, or colby jack work great.
  • ½ cup green onions Chopped, for flavor and garnish.
  • 1 tablespoon jalapenos Diced for heat, optional.
  • ½ teaspoon salt Adjust according to taste.

Preparation

  • In a mixing bowl, combine the sour cream, cream cheese, and shredded cheese until smooth.
  • Stir in the canned corn, green onions, diced jalapenos, and salt.

Cooking

  • Transfer the mixture to a baking dish and spread it evenly.
  • Bake in a preheated oven at 350°F (175°C) for about 20 minutes until bubbly and golden.

Serving

  • Serve warm with tortilla chips, pita chips, or sliced veggies.
  • Add a sprinkle of hot sauce or extra green onions on top for additional flavor.

Notes

This dip can be made ahead of time and stored in the fridge; just stir before serving. It can also be made without baking for a chilled version.
