Ingredients
  

  • 1 lb fresh or canned green beans drained if canned
  • 1 lb baby red potatoes quartered
  • 4 –6 slices bacon chopped
  • 1 tablespoon olive oil or butter optional
  • 1 packet 1 oz dry ranch seasoning mix
  • Salt and pepper to taste
  • Optional: chopped parsley for garnish

Instructions
 

  • In a large skillet, cook chopped bacon over medium heat until crispy. Remove bacon and set aside.
  • Leave a bit of bacon grease in the pan, then add potatoes. Cook for 10–12 minutes, stirring occasionally, until golden and tender.
  • Add green beans, ranch seasoning, and olive oil or butter if desired. Stir well to combine.
  • Cover and cook for another 8–10 minutes, until beans are tender and flavors are combined.
  • Return bacon to the skillet, stir everything together, and season with salt and pepper to taste.
  • Garnish with chopped parsley and serve warm.
