- 2 boneless skinless chicken breasts cut into strips
- 8 oz pasta penne, fettuccine, or your choice
- 4 tablespoons butter
- 3 cloves garlic minced
- 1 teaspoon Dijon mustard
- ½ teaspoon red pepper flakes
- 1 teaspoon smoked paprika
- 1 tablespoon lemon juice
- ½ teaspoon Italian seasoning
- 1 tablespoon fresh parsley chopped
- Salt and pepper to taste
- ½ cup grated Parmesan optional, for topping
Cook Pasta: Boil pasta in salted water according to package instructions. Drain and set aside.
Cook Chicken: In a large skillet, cook seasoned chicken strips in a bit of oil until golden and cooked through. Remove and set aside.
Make Cowboy Butter Sauce: In the same skillet, melt butter. Add garlic, Dijon mustard, red pepper flakes, smoked paprika, Italian seasoning, and lemon juice. Stir and cook until fragrant (2–3 minutes).
Combine: Return chicken to the skillet, add cooked pasta, and toss to coat with the cowboy butter sauce.
Finish: Sprinkle with fresh parsley and grated Parmesan if using. Serve hot.
