Ingredients
  

  • 2 boneless skinless chicken breasts cut into strips
  • 8 oz pasta penne, fettuccine, or your choice
  • 4 tablespoons butter
  • 3 cloves garlic minced
  • 1 teaspoon Dijon mustard
  • ½ teaspoon red pepper flakes
  • 1 teaspoon smoked paprika
  • 1 tablespoon lemon juice
  • ½ teaspoon Italian seasoning
  • 1 tablespoon fresh parsley chopped
  • Salt and pepper to taste
  • ½ cup grated Parmesan optional, for topping

Instructions
 

  • Cook Pasta: Boil pasta in salted water according to package instructions. Drain and set aside.
  • Cook Chicken: In a large skillet, cook seasoned chicken strips in a bit of oil until golden and cooked through. Remove and set aside.
  • Make Cowboy Butter Sauce: In the same skillet, melt butter. Add garlic, Dijon mustard, red pepper flakes, smoked paprika, Italian seasoning, and lemon juice. Stir and cook until fragrant (2–3 minutes).
  • Combine: Return chicken to the skillet, add cooked pasta, and toss to coat with the cowboy butter sauce.
  • Finish: Sprinkle with fresh parsley and grated Parmesan if using. Serve hot.
