Preparation

  • Heat the oil in a large skillet over medium heat.
  • Sauté the chopped onion until golden brown, about 5-7 minutes.

  • Add the curry powder, turmeric, and cumin and sauté until fragrant.
  • Add the diced chicken breast to the skillet and cook until no longer pink.

Cooking

  • Pour in the coconut milk, stirring to combine, and let it simmer for about 20 minutes.
  • Season with salt and pepper to taste, and serve over rice or with naan.
