  • 3 lbs boneless chicken raw or shredded rotisserie
  • 1 cup cream cheese softened at room temperature
  • ½ cup sour cream full-fat for creaminess
  • Ranch seasoning blend like Hidden Valley Original
  • 6 slices crispy bacon cooked and crumbled
  • cups shredded cheddar divided for layering

Preparation

  • If using rotisserie chicken, remove skin and bones, then shred the meat into cubes or strips.
  • If using fresh chicken, boil boneless chicken breasts in seasoned water, let cool, and shred using forks.

Mixing the Sauce

  • In a bowl, mix softened cream cheese until smooth.
  • Add sour cream and dry ranch dressing mix; blend until no lumps remain.
  • Fold shredded chicken into the sauce until fully coated.
  • For an extra kick, add a dash of hot sauce.

Baking

  • Preheat oven to 375°F (190°C).
  • Spread the chicken mixture evenly in a 9x13-inch baking dish.
  • Top with shredded cheddar cheese and sprinkle crumbled bacon.
  • Bake for 35-40 minutes or until the top is golden and bubbly.

Notes

This casserole can easily be customized with different cheeses or herbs. For a creamy texture, add 2 tablespoons of chicken broth if chicken appears too dry. Leftovers can be heated with a splash of milk to add moisture.
