  • 3 tablespoons all-purpose flour
  • ½ cup chicken broth
  • ½ cup 2% milk Can substitute with almond milk for a dairy-free option.
  • Salt and fresh ground black pepper To taste

Preparation

  • Melt the butter in a saucepan over medium-low heat.
  • Add the flour to the melted butter and whisk until smooth; continue to cook and whisk for 1 minute.
  • Slowly pour in the chicken broth while whisking constantly.
  • Whisk in the milk.
  • Bring the mixture to a boil while constantly whisking.
  • Continue to whisk until the mixture begins to thicken.
  • Season with salt and pepper; taste and adjust the seasoning as needed.
  • Remove from heat. You can use it immediately or let it cool and then store it in the fridge or freezer.

Notes

Serve this soup with crusty bread or crackers. It can also be used as a base for casseroles or pasta dishes. Garnish with fresh herbs for extra flavor. Store in an airtight container in the refrigerator for up to 3 days or freeze for up to 3 months.
