Ingredients
  

  • 2 tablespoons butter
  • 1 small onion diced
  • 2 cloves garlic minced
  • 2 carrots sliced
  • 2 celery stalks chopped
  • 4 cups chicken broth
  • 2 cups cooked shredded chicken
  • 1 package 9 oz refrigerated cheese tortellini
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Fresh parsley chopped (for garnish)

Instructions
 

  • In a large pot, melt butter over medium heat. Add onion, carrots, and celery; sauté for 5–6 minutes until softened.
  • Stir in garlic and cook for 1 minute more.
  • Pour in chicken broth and bring to a boil. Add Italian seasoning, salt, and pepper.
  • Add shredded chicken and tortellini. Reduce heat and simmer for 8–10 minutes until tortellini is tender.
  • Stir in heavy cream and let the soup simmer for another 5 minutes.
  • Taste and adjust seasoning as needed.
  • Serve hot, garnished with fresh parsley.
