Ingredients

  • 1.5 pounds ground beef
  • 1 clove garlic, minced (about 1 teaspoon)
  • ΒΌ teaspoon black pepper
  • 8 ounces pasta shells
  • 1 cup heavy cream
  • 1 cup salsa
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 teaspoon cumin
  • to taste salt

Instructions
 

Cooking

  • In a large skillet over medium heat, cook the ground beef until browned. Drain any excess grease.
  • Add the minced garlic, black pepper, and cumin. Stir and cook for an additional minute.
  • Pour in the salsa and heavy cream, mixing it well. Bring the mixture to a simmer.
  • Cook the pasta shells according to package instructions. Drain and then add them to the beef mixture.
  • Stir in shredded cheese until it is melted.
  • Season with salt to taste and serve warm.

Notes

Serve hot, garnished with fresh cilantro or extra cheese. Pairs well with side salad or tortilla chips. For vegetarian version, replace ground beef with black beans or lentils. Can add chopped bell peppers or corn for extra vegetables.
