Creamy Broccoli Casserole

Ingredients
  

Main Ingredients

  • 600 g 600g / 1.2 lb broccoli florets Small to medium, 2 large heads
  • 60 g 60g / 4 tbsp unsalted butter
  • 4 cloves 4 garlic cloves, minced
  • 6 tbsp 6 tbsp plain flour
  • 2 cups 2 cups milk Preferably warm, full or low fat
  • 1.5 cups 1.5 cups chicken broth/stock Preferably warm
  • 1.5 cups 1.5 cups cheddar cheese, freshly grated
  • 0.5 cup 1/2 cup grated parmesan cheese
  • to taste Salt and pepper

Topping Ingredients

  • 0.5 cup 1/2 cup panko breadcrumbs
  • 0.25 cup 1/4 cup grated parmesan cheese
  • 20 g 20g / 1.5 tbsp unsalted butter, melted

Instructions
 

Preparation

  • Preheat your oven to 180°C (350°F).
  • In a bowl, mix the topping ingredients with a pinch of salt and pepper. Set aside.
  • Melt the butter in a large pot over medium heat. Add the minced garlic and cook for about 1 minute until it becomes fragrant.
  • Stir in the flour and cook for another minute, stirring constantly.
  • While whisking, slowly pour in half of the milk. Once fully incorporated, whisk in the remaining milk and chicken broth.
  • Cook for 4 to 5 minutes, whisking occasionally, until the sauce thickens.
  • Turn off the heat, add the cheddar and parmesan cheeses, and stir until combined.
  • Add the broccoli to the sauce and stir well to coat it.
  • Pour the mixture into a casserole dish, pressing down to fill it evenly.
  • Sprinkle the topping mixture on top, cover with foil, and bake for 25 minutes.
  • After 25 minutes, remove the foil and bake for an additional 20 minutes, or until the topping turns a deep golden color and the broccoli is tender.
  • Let it stand for 5 minutes before serving.

Notes

To store leftovers, let the casserole cool completely. Place it in an airtight container and store it in the refrigerator for up to 3-4 days. Can be frozen for up to 2 months. For a creamier sauce, use half-and-half instead of milk. Add cooked chicken or ham for extra protein. Toss in other vegetables like cauliflower or carrots for added nutrition and flavor. Vegetarian option: Replace chicken broth with vegetable broth.
