For the Chicken

  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 tablespoons olive oil For cooking the chicken
  • 2 tablespoons Cajun seasoning Adjust to taste for more spiciness
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • ¼ teaspoon pepper
  • 1 teaspoon garlic powder

For the Pasta

  • 1 pound linguine pasta Cook according to package instructions

For the Sauce

  • 1 cup heavy cream Can substitute with half-and-half for a lighter version
  • 1 cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese For serving
  • 2 green onions sliced For garnish

Cooking

  • In a large skillet, heat olive oil over medium heat.
  • Add chicken pieces to the skillet. Season with Cajun seasoning, smoked paprika, salt, pepper, and garlic powder. Cook until the chicken is browned and cooked through, about 5-7 minutes.
  • Meanwhile, cook the linguine according to package instructions until al dente.
  • Once the chicken is cooked, add the heavy cream and mozzarella cheese to the skillet. Stir until melted and well combined.
  • Drain the pasta and add it to the skillet, tossing to coat the pasta in the sauce.
  • Serve hot, garnished with grated Parmesan and sliced green onions.

Notes

For a spicier kick, add more Cajun seasoning to your chicken. To store leftovers, place the pasta in an airtight container and refrigerate for up to 3 days. Reheat in the microwave or on the stovetop, adding a splash of cream to loosen the sauce if needed.
