- 2 boneless skinless chicken breasts, diced
- 1 tablespoon Cajun seasoning
- 1 tablespoon olive oil
- 2 cloves garlic minced
- 1 cup heavy cream
- ½ cup chicken broth
- 1 package 9 oz refrigerated cheese tortellini
- ½ cup grated Parmesan cheese
- ½ cup cherry tomatoes halved (optional)
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Toss diced chicken with Cajun seasoning until evenly coated.
Heat olive oil in a large skillet over medium-high heat. Add chicken and cook until browned and cooked through, about 5–6 minutes. Remove and set aside.
In the same skillet, add garlic and sauté for 1 minute.
Pour in chicken broth and heavy cream; bring to a simmer.
Add tortellini and cook for 5–6 minutes, or until tender.
Stir in Parmesan cheese and return chicken to the skillet. Add cherry tomatoes if using.
Simmer for 2–3 minutes until the sauce thickens.
Garnish with fresh parsley and serve hot.
