  • 2 tbsp butter or margarine Can use either for sautéing.
  • 1 can cream of chicken soup (10 oz) Base for the soup.
  • 1.5 cups milk Can substitute with half-and-half for creaminess.
  • 1 lb Velveeta cheese, cubed Use any good melting cheese as an alternative.
  • 1 package frozen chopped broccoli (10 oz) Frozen broccoli is convenient; fresh can be used too.

Preparation

  • Sauté the chopped onion in butter or margarine until it becomes translucent.
  • Once the onion is ready, add all the other ingredients into a crock pot.
  • Set the crock pot on low and cook for 3–4 hours until everything is well combined and heated through.

  • Serve the soup hot in bowls, garnished with extra cheese or fresh herbs if desired.
  • Pair it with crusty bread or a fresh salad for a complete meal.

Notes

Store leftover soup in an airtight container in the refrigerator for up to 3 days or freeze for longer storage. Reheat on the stove or in the microwave. For a healthier version, use low-fat cheese and milk, and feel free to add more vegetables.
