Ingredients
  

  • 12  oz fettuccine pasta
  • 1  lb large raw shrimp peeled & deveined (21–25 count)
  • 2  Tbsp olive oil
  • ½ medium onion finely chopped
  • 2  Tbsp unsalted butter
  • 2 garlic cloves minced
  • ⅓  cup white wine optional
  • 2  cups whipping cream
  • 1  cup shredded Parmesan cheese
  • ½  tsp sea salt or to taste
  • ¼  tsp black pepper or to taste
  • ¼  tsp paprika or to taste
  • 1  Tbsp parsley chopped (for garnish)

Instructions
 

Cook pasta:

  • Boil fettuccine in salted water until al dente. Drain and set aside.

Prepare shrimp:

  • Season shrimp with salt, pepper, and paprika. Heat olive oil in a large non-stick pan over medium-high. Cook shrimp ~2 min per side until opaque. Remove and set aside.

Build sauce:

  • In the same pan, melt butter and sauté onion until soft and golden. Add garlic and cook until fragrant. Pour in wine and reduce by ~75%.
  • Stir in whipping cream, simmer ~2 min. Add Parmesan and stir until sauce is creamy and smooth.

Combine:

  • Add drained pasta and shrimp back into the pan. Toss to coat thoroughly in sauce.

Garnish and serve:

  • Plate immediately, garnished with chopped parsley and extra Parmesan if desired.
