  • 1.5 kg potatoes, peeled and cut into 2.5cm/1” cubes (Preferably Sebago, Russet, or Maris Piper) Note 1: Preferably use starchy varieties for creaminess.
  • 1 tbsp salt (for cooking)
  • 60 g unsalted butter, chopped
  • 0.5 cup milk, preferably warmed Always warm your milk before adding.
  • 0.5 tsp salt
  • to taste extra melted butter For drizzling on top.
  • to taste chives or parsley, chopped For garnish.

Preparation

  • Place the cubed potatoes in a large pot and add 1 tablespoon of salt. Pour in enough water to cover the potatoes, about 10cm / 4” above them.
  • Bring the water to a boil over high heat. Then, reduce the heat and let it simmer rapidly. Cook for about 15 minutes or until the potatoes are very soft.
  • Drain the potatoes well and return them to the pot. Allow them to sit for 1 minute to help evaporate excess water.
  • Add the butter and warm milk to the pot. Mash the potatoes well until smooth. Adjust with more milk for a looser consistency, if preferred.
  • Avoid using appliances like beaters or blenders, as they can turn the potatoes gluey.
  • Transfer the mashed potatoes to a serving bowl, create swirls on top, drizzle with melted butter, and sprinkle with chopped chives.

Notes

If you have leftovers, store them in an airtight container in the refrigerator for 3-5 days. Add a little milk or cream to restore creaminess when reheating.
